Canta Ranas means “singing frogs” and refers to those in the creek running through Edward Sandoval’s farm. While Edward is the reason this coffee tastes so good, I can’t help but think the frogs’ evening serenade adds its own magic. Frogs are also a keystone species which signals that the farm works in harmony with the ecosystem as long as you hear their chorus. This lot of the relatively new Chiroso variety is stunning. The best analogy is a dessert of lightly poached pears, plums, and cherries set off with a touch of rosewater. Stellar clarity and liveliness in the fruit is not compromised by decadent sweetness.
